Fonio is highly appreciated for its culinary and dietetic properties. It is generally eaten as couscous ("foyo", "djouka", etc) or as thin or thick gruel ("dégué", "moni", "tô", etc), but there are numerous other possibilities (with spicy meat sauce, or in salads, cakes, doughnuts, etc).
Fonio is widely held to be the tastiest cereal, and its delicate flavour makes it an obvious choice for high days and holidays. A popular proverb has it that "cooks can always rely on fonio" . It is easily digested, and is traditionally recommended for children, the elderly and the overweight.
Main courses such as couscous and "Tô" made with various sauces, thick gruel or fonio with oily sauce.
